Salmon, Shrimp, Cheesy Broccoli with Corn

 


Ingredients




For the Salmon and Shrimps:
  • 2 Salmon fillets (about 150 grams each)
  • 200 grams shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill
  • salt & pepper to taste
For the Cheesy Broccoli:
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter
  • 1 tablespoon corn flour
  • 1 cup of milk
  • Salt & pepper to taste
For the Corn:
  • 2 ears of corn, husked and cut into halves
  • 2 tablespoons butter
  • Salt & pepper to taste
Instructions
  1. In a small bowl, season the salmon by mixing 1 tablespoon of olive oil, minced garlic, lemon juice, dried dill, salt & pepper. Brush the mixture over the salmon fillets.


  2. Steam the salmon fillets for about 10-15 minutes.
  3. Toss the shrimps in the remaining 1 tablespoon of olive oil, salt and pepper. Fry them till they turn pink and opaque.

  4. To prepare the cheesy broccoli, steam the florets untill tender about 5 to 7 minutes. 

  5. In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute. Gradually add in the milk and stir it constantly untill the mixture thickens.

  6. Remove it from heat and stir in the shredded cheese untill it melts and smooth. Season it with salt & pepper to taste. Toss the steamed broccoli in the cheese sauce. 


  7. Bring a large pot of water to a boil. Add the corn and cook it for 5-7 minutes untill tender. 

  8. Assemble all the cooked ingredients onto a blg platter dish. Serve it immediately.
