Ingredients
- 2 tablespoons sesame oil
- 1 cup diced shallots
- 1 1/2 - 2 cups diced ham
- 1 cup frozen peas and carrots, thawed
- 2 large lightly beaten eggs
- 2 cups cooked leftover rice
- 2-3 tablespoons light soy sauce
- 2 tablespoons chopped green onions
Instructions
- Heat a large skillet or wok over medium- high heat
- Add 2 tablespoons sesame oil to the bottom.
- Add 1 cup diced shallots, 1 1/2 - 2 cups diced ham and 1 cup frozen peas and carrots abd fry untill tender.
- Slide the ham mixture to one side of the wok and pour 2 large lightly beaten eggs onto the other side. Use a spatula to scrable the eggs. Once cooked, mix the eggs with the ham mixture..
