The Hainanese chicken rice which consists of succulent steamed white chicken cut into bite-size pieces served with fragrant rice with some light soy sauce added to the dish.
It has always been one
of the most favourite hawker food among the locals, where they love the flavour
of the rice.
What I have come up with is a very simple & easy version of the Hainanese Chicken Rice using the rice-cooker method.
3 stalks of pandan leaves
2 cups of chicken
stock
2 cups of rice
4 slices of ginger
300g of chicken
drumsticks
3 shallots
3 cloves of garlic
Full recipe
1. Slice slits on the
drumsticks
2. Add in 1 tablespoon
of sesame oil
3. Add a dash of white
pepper
4. Add a pinch of salt
5. Massage and
marinate the drumstick for 30 mins
6. Chop up the garlic
and the shallots together
7. Slice the ginger
into 4
8. Add in 1 teaspoon of sesame oil into the empty rice cooker pot.
9. Add in the chopped
garlic and shallots
10. Add in the sliced ginger
11. Give it a good stir to make sure everything is coated with the oil.
12. Start the rice
cooker in Normal mode for 8 ins and check if the spices are sizzling.
13. Add in the 2 cups
of washed rice
14. Give it a stir for
1 min to let everything infuse together.
15. Add in 2 cups of
chicken stocks
16. Give it a good
stir.
17. Tie the pandan
leaves into a knot and add it in together with the chicken drumsticks.
18. Reset the rice cooker and start the rice cooker in Normal Cook mode as per normal.
