On a rainy day the best way to escape from the cold is to eat delicious hot food. Making this scrumptious hearty soup is easy to prepare, with hardly any trouble at all. This chicken macaroni soup recipe is packed with winter vegetables and nutritious vitamins. It is hugely popular because it is a delicious light meal ideal for breakfast. It is also recommended as an easily digestible, recovery food for kids who catch a cold or sick and people with a hangover.
Ingredients
For making chicken broth
- 2 chicken breasts (you can use any type of meat)
- 200 grams elbow macaroni
- 4 pieces chicken hotdogs (or Chinese sausages)
- 2 small sized carrots (diced)
- 2 cups shredded cabbages
- 2 stalks celery (finely chopped)
- 1 cup evaporated milk
- 1 tablespoon fish sauce
- 4 cups water
- 1 medium-sized Onion
- 4 cloves garlic
- canola oil
- salt
- pepper
Instructions
- Put chicken breasts in a pot. Add 4 cups of water, season it with salt and pepper. Boil it for about 10 to 15 minutes. Set aside the chicken broth. Shred the chicken.
- In a much bigger pot, heat some canola oil.
- Saute onion and garlic.
- Add in the hotdogs, shredded chicken, carrots and celery.
- Pour in the chicken broth. Add more water if needed.
- Pour in the elbow macaroni, season it with fish sauce, salt and pepper. Allow it to boil for about 8 to 10 minutes.
- Pour in the evaporated milk. Cover it for one minute. Remove the lid cover and let it simmer for another 1 minute.
- Add in the shredded cabbages and allow it to simmer for another minute.
- Dish is ready to be served on the table.
