How to Cook Chinese Stir-Fry Scallops with Vegetables


Ingredients

  • 400grams scallops 

  • 1 carrot, peeled and sliced 
  • 1 red bell pepper, cut into triangular shapes
  • 1 yellow bell pepper, cut into triangular shapes
  • 200grams snow peas 

  • 1 clove garlic, finely chopped
  • 1 slice ginger root, finely chopped
  • few dashes of ground chilli powder 

  • 1/2 cup vegetable stock 
Seasonings
  • 1 teaspoon salt
  • 1 tablespoon corn flour
  • 1 tablespoon cold water
Marinade for Scallops

  • 1/4 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • 1 tablespoon Shaoxing wine
Instructions
  1. Marinade scallops with shaoxing wine, salt and ground white pepper. 

  2. Heat up a wok with 1 tablespoon of oil. Stir-fry the garlic, ginger and chilli powder untill fragrant. 

  3. Add carrots and keep stir-frying it for 1 minute. 

  4. Add yellow and red peppers. Stir-fry them for 30 seconds. 

  5. Add snow peas and mix it evenly. 

  6. Add stock and cook at high-heat untill it has reduced a little bit. 

  7. Add scallops and gently mix evenly.. Stir-fry it untill the scallops are cooked. This should only take about a couple of minutes, depending on the thickness and size of your scallops.

  8. Mix the corn flour with cold water to make a slurry of corn flour water. Stir the corn flour water into the pot and bring it to a boil again. 

  9. Serve the dish.
