How to Cook Fresh Tomato Shrimp Pasta


Ingredients

  • 2 ounces tubular spaghetti
  • 2 cloves garlic
  • 1/2 sweet onion, cut into wedges 

  • 3 tablespoons fresh oregano leaves 

  • 2 tablespoons olive oil
  • 1 medium tomato, chopped 

  • 2 tablespoons chopped fresh basil
  • salt and pepper
  • 1/2 cup spinach leaves 
    Tip: Wash the spinach leaves in a bowl under a cold running tap. Then tip it into a
           coriander or sieve to drain. Pick off any woody stem-ends from the leaves. You will
           need a knife and chopping board for it. Alternatively, you can tear off the stems
           since they are soft.

  • 1/2 pound cooked shrimps - peeled and deveined
  • Fresh mozzarella cheese, diced
Instructions
  1. Add pasta &1 tablespoon salt to 1 litre of boiling water. Cook i for 9 minutes or to untill tender. Drain.
  2. Combine the garlic, onion and oregano in a food processor. Pulse untill it is finely chopped. 

  3. Heat the oilve oil in a large skillet over rmedium heat.
  4. Add the onion mixture. Cook and stir it untill fragrant and almost golden. 

  5. Mix in the tomatoes, basil, salt & pepper. 


  6. Allow it to simmer about 5 minutes while the pasta is cooking, stirring it occasionally. 

  7. Mix in spinach untill it wilts. 

  8. Just before the pasta is done, stir in the shrimps. Cook it untill heated through. 

  9. Toss with pasta on a serving plate. Mix in the mozzarella cheese. 

  10. Garnish the plate with more basil leaves. Serve immediately.
