How to Cook Healthy Spinach Scrambled Eggs


Ingredients


  • Cooking spray  / 1 tablespoon vegetable oil
  • 2 large eggs
  • 2 tablespoons skim milk
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1/2 cup spinach leaves, chopped or torn
Instructions
  1. Heat a large skillet over medium-high heat. Coat it well with the cooking spray or vegetable oil. 
  2. Crack the eggs into a medium-sized dish. Using a wire whisk or spoon, beat the eggs and break up the yolks completely. 

  3. Add the milk to the egg mixture, followed by the salt and ground black pepper, Whisk the mixture together well. 

  4. Pour the egg mixture into the heated pan. Use a wooden spatula to stir it continuously as it cooks. 

  5. When the eggs begin to take form, add the spinach to the pan. 

  6. Continue cooking the eggs and spinach untill the spinach wilts  and the eggs are no longer runny, for about 2 minutes.
  7. Serve the dish immediately.
