Ingredients
- Cooking spray / 1 tablespoon vegetable oil
- 2 large eggs
- 2 tablespoons skim milk
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1/2 cup spinach leaves, chopped or torn
Instructions
- Heat a large skillet over medium-high heat. Coat it well with the cooking spray or vegetable oil.
- Crack the eggs into a medium-sized dish. Using a wire whisk or spoon, beat the eggs and break up the yolks completely.
- Pour the egg mixture into the heated pan. Use a wooden spatula to stir it continuously as it cooks.
- Continue cooking the eggs and spinach untill the spinach wilts and the eggs are no longer runny, for about 2 minutes.
- Serve the dish immediately.
