How to Cook Salmon with Greens and Shiitake Mushrooms

 

Ingredients

  • 1 salmon fillet
  • 1 tablespoon vegetable or sunflower oil
  • 1 clove garlic, finely minced
  • 1/2 cup shiitake mushrooms, stemmed and sliced 

  • 1 1/2 cup of bok choy, roughly chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • salt & freshly ground black pepper
Instructions
  1. In a non-stick pan over medium-high heat, add salmon and cook it for 4 minutes per side, flipping it with a spatula. 

  2. Add 1 tablespoon oil and garlic. Lower the heat to prevent the garlic from burning. 

  3. Add sliced mushrooms and boy choy leaves, stirring it continuously for 1 minute. 



  4. Cover the pan and allow it to cook for 2 minutes. 

  5. Remove the lid. Add the soy sauce, sesame oil and continue to cook it for another 2 to 3 minutes or untill the leaves wilt. 

  6. Pile the mushrooms and greens on a plate with the salmon. 
  7. Season it with salt & pepper. Serve it immediately.
