Ingredients

- 5 oz spaghetti
- 1 tablespoon kosher salt
- 1 salmon fillet
- salt and fresh ground black pepper
- 1 tablespoon olive oil
- 1 shallot - finely chopped
- 1 clove garlic, minced
- 1/4 cup dry white wine
- 1/2 cup whipping / heavy cream
- 1 lemon
- 3 tablespoons coarsely chopped parsley
- Lemon wedge to serve
To Cook Pasta
- Bring a large pot of water to boil and add in the salt.
- Add the spaghetti and cook untill al dente.
- When the pasta is cooked, reserve 2 cups of the cooking water and drain it.
- Whilst the pasta is boiling, cook the salmon and sauce.
- Place a large nonstick frying pan or skillet over medium-high heat.
- Add the wine to the pan. Scrape any browned bits off the bottom of the pan.
- Cook the wine for about 1 minute. Stir in the juice of 1/2 the lemon.
- Pour in the whipping cream and heat it through.
