Ingredients
- 1/2 garlic
- 1/2 shallots\1 1/2 scallions or chopped spring onion
- 1/2 tomato
- 1/2 firm tofu
- 1 tablespoon oil
- 1/2 cup of water
- 1 tablespoon fish sauce
- 1/4 tablespoon sugar
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
Instructions
- Cut tofu into cubes.
- Mince garlic, slice shallots and chop scallions / spring onions.
- Rinse the tomato and remove stems, any bruises or blemishes. Cut tomato into wedges.
- Remove oil from pan leaving 1 teaspoon of oil.
- Add the cooked tofu. Then allow it to simmer with the lid on untill gravy reduces and tofu softens.
- Turn off the stove. Remove lid from pan.
- Stir in the chopped spring onion, leaving some for garnishing. Add a dash of white pepper & salt. Enjoy the dish with steamed white rice.
