How to Fry Tofu with Tomatoes

 


Ingredients

  • 1/2 garlic
  • 1/2 shallots\1 1/2 scallions or chopped spring onion
  • 1/2 tomato
  • 1/2 firm tofu
  • 1 tablespoon oil
  • 1/2 cup of water
  • 1 tablespoon fish sauce
  • 1/4 tablespoon sugar
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
Instructions
  1. Cut tofu into cubes.
  2. Mince garlic, slice shallots and chop scallions / spring onions.
  3. Rinse the tomato and remove stems, any bruises or blemishes. Cut tomato into wedges.
  4. In a pan. heat oil over medium heat. Add tofu and fry each side of the tofu cubes untill golden brown. 

  5. Remove oil from pan leaving 1 teaspoon of oil.
  6. Saute shallots and garlic untill fragrant. 

  7. Then add the spring onion and tomato wedges. 
  8. Continue sauteing untill tomatoes begin to soften.


  9. Add water, fish sauce and sugar to the pan. Increase heat to the maximum. Once gravy begins boiling, reduce heat to the lowest. 

  10. Add the cooked tofu. Then allow it to simmer with the lid on untill gravy reduces and tofu softens. 

  11. Turn off the stove. Remove lid from pan. 
  12. Stir in the chopped spring onion, leaving some for garnishing. Add a dash of white pepper & salt. Enjoy the dish with steamed white rice.
