Ingredients
- 250 grams fresh wide rice noodle
- 1 tablespoon vegetable oil
- 5 small prawns/ shrimps
- 1 garlic clove, finely chopped
- 1/2 Chinese sausage
- 1 piece fried fish cake
- 10 stems spring onions, cut into 4 - 6 pieces
- 1.25 cup bean sprouts
- 1 egg
Sauce
- 2.5 teaspoon dark soy sauce
- 2 teaspoon light soy sauce
- 1 teaspoon oyster sauce
- 2 teaspoon kecap manis / sweet soy sauce
Instructions
- Mix all the sauce ingredients together.
- Heat 1 tablespoon oil in a large skillet over high heat. Swirl it around it.
- Add prawns when the oil start cooking for 30 seconds.
- Add garlic and stir it for 10 seconds.
- Add noodles. Using both hands on the handle with a spatula + wooden spoon. toss it 4 times untill it is coated with oil.
- Push everything to one side. Add 1 remaining tablespoon oil.
- Add egg and cook it for about 1 minute. Use the wooden spoon to chop it up roughly.
- Pour sauce over the noodles. Toss to disperse the sauce through the noodles. Pause between tosses to give the noodles a chance to caramelise on the edges.
