Ingredients
- 1/2 to 1 onion, peeled and chopped
- 2-3 cloves garlic. peeled and chopped
- 1 kg or 2.2lbs chicken drumsticks & wings
- Your personal mix of vegetables such as carrots, celery stalks or leek
- salt & pepper to taste
- 2 tablespoons olive oil for cooking
- cold water to cover all the ingredients
- seasoning eg.fresh parsley leaves, lemon juice or dill
Instructions
- Heat olive oil in a large pot or saucepan over medium heat.
- When it gets hot, add the chopped onion and garlic into the soup pot and cook untill starting to soften.
- Add the chicken drumsticks, salt and pepper.
- Brown the chicken pieces on all sides.
- Once all the chicken has browned, pour over cold water to cover it.
- Bring it up to boil and allow it to simmer for 1.5 to 2 hours or untill to your liking.
- Serve as is or blend to create a smooth and creamy soup.
