How To Cook Hearty Chicken and Vegetable Stew

 


Ingredients

  • 1 lb chicken breasts, cooked and shredded
  • 2 tablespoons olive oil
  • 1/2 large onion, chopped
  • 3 cloves garlic, minced
  • 1 medium potato, cubed
  • 1/2 cup frozen green peas
  • 1/2 cup chicken broth
  • 2 tablespoons tomato paste
  • 1/2 teaspoon ground basil 
  • 1/2 teaspoon ground coriander
  • salt and pepper to taste
  • fresh thyme or parsley for garnish
Instructions
  1. In a large pot, heat olive oil over medium-heat.
  2. Add chopped onion and cook it untill soft for about 5 minutes. 

  3. Add garlic and cook for another minute untill fragrant. 

  4. Add carrots, potatoes, chicken broth and water. 

  5. Stir in tomato paste, coriander, basil, salt and pepper. Bring it to a boil. Reduce heat and simmer it for 20 minutes or untill the vegetables are tender. 

  6. Stir in shredded chicken and frozen peas. 

  7. Let it simmer for another 5 to 10 minutes untill everything is heated through and well-combined. 

  8. Ladle the stew into a bowl and garnish it with fresh thyme or parsley. 

  9. Serve it hot with fine wholegrain or crusty bread on the side.
