Ingredients

- 1 lb chicken breasts, cooked and shredded
- 2 tablespoons olive oil
- 1/2 large onion, chopped
- 3 cloves garlic, minced
- 1 medium potato, cubed
- 1/2 cup frozen green peas
- 1/2 cup chicken broth
- 2 tablespoons tomato paste
- 1/2 teaspoon ground basil
- 1/2 teaspoon ground coriander
- salt and pepper to taste
- fresh thyme or parsley for garnish
Instructions
- In a large pot, heat olive oil over medium-heat.
- Add chopped onion and cook it untill soft for about 5 minutes.
- Let it simmer for another 5 to 10 minutes untill everything is heated through and well-combined.
- Serve it hot with fine wholegrain or crusty bread on the side.
