How To Cook Juicy, Soft and Saucy Pork Belly

Ingredients

  • 1.5 lbs pork belly, skin on, cut into 1-inch cubes
  • 2 tablespoons cooking oil
  • 2 tablespoons ginger, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons rock sugar
  • 3 hard-boiled eggs 

  • 3-4 pieces of shiitake mushrooms, sliced
  • 1 tablespoon light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon Shaoxing / Huatiao wine
  • 1 star anise
  • 1 cinnamon stick
  • 3 cups of water
  • 1 teaspoon salt
  • green onions / coriander leaves (for garnish)
Instructions
  1. In a pot of boiling water, blanch the pork belly cubes and boil it for 5 minutes. Drain and rinse it under cold water.
  2. Heat the oil in a large pot or wok over medium-high heat. Add the pork belly and cook it untill browned on all sides. 

  3. Push the pork belly to the side and add the ginger and garlic. Cook it untill fragrant for about 30 seconds. 

  4. Add the rock sugar and cook it untill it melts and turns a golden brown colour. 

  5. Stir in the light soy sauce, dark soy sauce, Shaoxing wine, star anise and cinnamon stick. 

  6. Pour in the water and bring it to a boil. Reduce the heat to a simmer. Add in the bard-boiled eggs and sliced mushrooms. Cover and cook for 1 to 1.5 hours or untill the pork belly is tender. 

  7. Remove the lid and increase the heat to high. Cook untill the sauce thickens and becomes syrupy. 

  8. Add 1 teaspoon salt.
  9. Garnish it with green onions or Chinese Coriander leaves and serve it with rice.
