Ingredients
- 1.5 lbs pork belly, skin on, cut into 1-inch cubes
- 2 tablespoons cooking oil
- 2 tablespoons ginger, sliced
- 3 cloves garlic, minced
- 2 tablespoons rock sugar
- 3 hard-boiled eggs
- 3-4 pieces of shiitake mushrooms, sliced
- 1 tablespoon light soy sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon Shaoxing / Huatiao wine
- 1 star anise
- 1 cinnamon stick
- 3 cups of water
- 1 teaspoon salt
- green onions / coriander leaves (for garnish)
Instructions
- In a pot of boiling water, blanch the pork belly cubes and boil it for 5 minutes. Drain and rinse it under cold water.
- Heat the oil in a large pot or wok over medium-high heat. Add the pork belly and cook it untill browned on all sides.
- Remove the lid and increase the heat to high. Cook untill the sauce thickens and becomes syrupy.
- Add 1 teaspoon salt.
