How To Cook Stir-Fried Glass Noodles with Cabbage and Egg

 


Ingredients

  • 40 grams glass noodles
  • 2 eggs
  • 1 cup cabbage, bite-sized
  • 2-3 cloves garlic, minced
  • 1 tablespoon oil
  • 1 tablespoon oyster sauce
  • 1/2 tablespoon light soy sauce
  • 1.5 teaspoon sugar
  • 1/4 teaspoon ground white pepper
  • green onion, chopped for garnish
Instructions
  1. Soak the glass noodles in a bowl of hot water for 5-10 minutes untill it is pliable. Drain and rinse it with cold water. 

  2. Beat the eggs with a pinch of salt. 

  3. Heat a skillet over medium-high heat and add the cooking oil. 
  4. Add the beaten eggs and scramble it untill cooked through. Remove from the skillet and set aside. 

  5. Add the garlic to the skillet and stir-fry it for 30 seconds untill fragrant. 

  6. Add the cabbage and stir-fry it for 2-3 minutes untill softened. 

  7. Add the glass noodles to the skillet and stir fry it for 1-2 minutes. 

  8. Add the oyster sauce, light soy sauce, sugar and white pepper.  Toss everything together to combine. 

  9. Return the scrambled eggs to the skillet. For variation, I added prawns to make it a more substantial meal. 

  10. Garnish the dish with green onions and serve!
