How To Cook Stir-Fry Chicken with Vegetables

 


Ingredients
  • 1 pound chicken leg, shredded 

  • 2 tablespoons olive oil
  • 3 garlic cloves, minced 

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sweet paprika
  • Juice of 1/2 lemon
  • 1 teaspoon thyme or rosemary
For the vegetables
  • 1 carrot, chopped into cubes 

  • 1 head of broccoli, cut into florets 

  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • a pinch of salt & pepper
Instructions
  1. Mix olive oil, garlic, salt, pepper, sweet paprika powder, lemon juice and thyme. 


  2. Coat the chicken pieces well with the marinade for at least 30 minutes. 

  3. Sear the marinated chicken pieces on both sides untill they turn golden brown.

  4. Boil the cut carrots in salted water for 5 minutes. Drain it.

  5. Steam the broccoli for 4 minutes  to maintain its bright colour and fresh taste. 

  6. Heat olive oil in a pan. 
  7. Add garlic, followed by the carrots and broccoli. 

  8. Stir-fry for 2 minutes with salt and pepper. 
  9. Throw in the cooked chicken meat and mix all the ingredients together. 

  10. Drizzle with the juices from the cooked meat for extra flavour. 
  11. Serve the dish with a bowl of hot rice.
