How To Cook Chicken Stir Fry With Brown Rice

 


Ingredients
  • 2 chicken fillets/breasts (boneless, skinless, cut into thin strips)
  • 1 cup brown rice
  • 2 tablespoons olive oil
  • 2 stalks celery, cut into thin slices
  • 2 cloves garlic, minced
  • 1/2 onion, sliced
  • 1 tablespoon light soy sauce
  • 1 tablespoon vegetarian oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 cup mushrooms, sliced 
  • 1 tablespoon sesame seeds
  • fresh cilantro (for garnish)
  • salt and pepper to taste
Instructions
  1. In a medium pot, bring 2 cups of water to a boil. Add the brown rice, reduce heat to low and cover. Cook it for 40-45 minutes or untill tender and water is absorbed. Remove from heat and let it sit for 5 minutes.
  2. While the rice is cooking, heat olive oil in a large skillet. Add the chicken strips and season it with salt and pepper. Cook untill the meat is browned and cooked through for 5-7 minutes. Remove it from pan and set aside.

  3. In the same skillet, add a bit more oil if needed. Add the garlic, celery, mushrooms and onion. Stir fry for about 4-5 minutes untill vegetables are tender-crisp. 

  4. Return the cooked chicken to the skillet with the vegetables. Add the light soy sauce, oyster sauce and sesame oil. Stir well to combine and heat for 2-3 more minutes. 

  5. Serve the stir fry over the cooked brown rice. Garnish it with sesame seeds and cilantro.
