Ingredients
- 2 chicken fillets/breasts (boneless, skinless, cut into thin strips)
- 1 cup brown rice
- 2 tablespoons olive oil
- 2 stalks celery, cut into thin slices
- 2 cloves garlic, minced
- 1/2 onion, sliced
- 1 tablespoon light soy sauce
- 1 tablespoon vegetarian oyster sauce
- 1 teaspoon sesame oil
- 1 tablespoon sesame seeds
- fresh cilantro (for garnish)
- salt and pepper to taste
Instructions
- In a medium pot, bring 2 cups of water to a boil. Add the brown rice, reduce heat to low and cover. Cook it for 40-45 minutes or untill tender and water is absorbed. Remove from heat and let it sit for 5 minutes.
- While the rice is cooking, heat olive oil in a large skillet. Add the chicken strips and season it with salt and pepper. Cook untill the meat is browned and cooked through for 5-7 minutes. Remove it from pan and set aside.
