How To Cook Prawn Fried Rice

Ingredients

  • 1/2 cup cooked rice (about 200grams)
  • 100 grams Tiger prawns or King Prawn (peeled & deveined)
  • 0.13 teaspoon salt
  • 0.13 teaspoon white / black pepper
  • 0.5 teaspoon Shaoxing Cooking Wine
  • 1 egg, whisked
  • 0.5 tablespoon garlic, finely chopped
  • 0.25 onion, cut small dices (about 50grams)
  • 50 grams carrots, cut small dices
  • 0.25 cup green peas (about 50 grams)
  • 1 spring onions, cut into thin slices
  • 1 tablespoon vegetable oil
TIP: If you do not have any leftover rice, here is how to make it.
        Combine 4 cups of water and 2 cups white rice in a saucepan . Bring it to a boil.
        Reduce heat, cover it and allow it to simmer untill the rice is tender and water has been
        absorbed for 20 to 25 minutes. Remove it from heat and let cool to room temperature.
        For best results, cover it and refrigerate it for 8 hours to overnight, before using in this
        recipe.

Type of rice best for cooking Chinese fried rice:

- Jasmine rice or any long-grain white rice, basmati or even medium-grain rice.

Stir Fry Sauce



  • 1 tablespoon Oyster Sauce
  • 1 tablespoon Light Soy sauce
  • 0.5 teaspoon sesame oil
  • 0.13 teaspoon white / black pepper
Instructions
  1. First, season the prawns with salt, white pepper and Chinese cooking wine. Set it aside. Add a pinch of salt in the egg. Whisk and set it aside. 


  2. Heat the pan into medium-high heat. Add 1 tablespoon of oil. 

  3. Stir-fry the prawns for few seconds and follow with the chopped garlic. Cook for another 1-2 minutes and push it one side of the pan.


  4. Drizzle 1 teaspoon oil and add the whisked egg in. Once the egg is set in the bottom, scramble it into small pieces. Remove the prawns and egg from the pan. Set it aside. 



  5. In the remaining pan, add 1 tablespoon oil. Add chopped onions and stir it for a few seconds. Add the carrots and mixed peas. Cook it for 2 minutes or untill cooked through. 

  6. Next, add the rice and pour the sauce over it. Fry with high heat for 2-3 minutes or untill the sauce dries out

  7. Place the prawns and egg back into the pan. Toss well to combine everything evenly and continue stir-fry for another 1 minute. 

  8. Turn off the heat and sprinkle the chopped spring onions. Transfer it to serving plate immediately.
