Ingredients
- 1 chicken leg, cut into half
- 1 tablespoon minced garlic
- 1/2 chilli padi, diced
- 1 lemongrass, chopped diagonally
- 1 -2 sprigs curry leaves
- 1/2 tablespoon curry powder
- 100ml water
- 1 tablespoon cooking oil + more for frying the chicken
For the Chicken Marinade
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
- 1 egg
- 1 teaspoon pepper
For the Sauce
- 1 tablespoon Thai sweet chilli sauce
- 1/2 tablespoon vegetarian oyster sauce
- 1/2 tablespoon light soy sauce
- 1/2 tablespoon kecap manis (swet soya sauce)
- 1/2 tablespoon fish sauce
- 1 teaspoon sugar
Instructions
- Make a few slits on the thicker parts of the chicken leg.
- Heat up some cooking oil in the pan and fry the chicken leg till they are cooked on both sides and turn golden brown.
- Add in the cooked chicken leg. Stir and coat it well together with the sauce.
