How to Cook Tasty Chicken


Ingredients
  • 1 chicken leg, cut into half
  • 1 tablespoon minced garlic
  • 1/2 chilli padi, diced
  • 1 lemongrass, chopped diagonally
  • 1 -2 sprigs curry leaves
  • 1/2 tablespoon curry powder
  • 100ml water
  • 1 tablespoon cooking oil + more for frying the chicken 
For the Chicken Marinade

  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 1 egg
  • 1 teaspoon pepper
For the Sauce

  • 1 tablespoon Thai sweet chilli sauce
  • 1/2 tablespoon vegetarian oyster sauce
  • 1/2 tablespoon light soy sauce
  • 1/2 tablespoon kecap manis (swet soya sauce)
  • 1/2 tablespoon fish sauce
  • 1 teaspoon sugar
Instructions
  1. Make a few slits on the thicker parts of the chicken leg. 

  2. Add in all the marinade ingredients into the mixing bowl to marinate the chicken leg for 1 hour in the fridge. 

  3. Heat up some cooking oil in the pan and fry the chicken leg till they are cooked on both sides and turn golden brown. 

  4. Drain the oil and place the chicken meat on paper towels to soak up the excess oil. 

  5. Use one tablespoon of cooking oil from the previous step to stir fry the minced garlic, chilli padi, lemongrass and curry leaves together. 

  6. Add in the curry powder and water into the pan. 

  7. Add in all the sauce ingredients and allow it to simmer on low heat till it boils. 

  8. Add in the cooked chicken leg. Stir and coat it well together with the sauce. 

  9. Remove the chicken leg from the flame. Garnish the plate with some red bell peppers and coriander leaves.
