How To Cook Tomato Corn Pork Ribs Soup

 


Ingredients

  • 300 - 500grams pork ribs, depending on how many pax you are cooking for.
  • 1 ear of corn (I used organic type)
  • 2 - 3 tomatoes, quartered
  • ginger slices
  • salt & pepper to taste
  • Optional: Spring onions for garnish
Instructions
  1. Boil water in a pot. Add the pork ribs and blanch them for a few minutes untill the blood and impurities are removed. Drain and rinse. 

  2. Heat oil in a pot. Add the ginger slices and saute it untill fragrant. 

  3. Add the tomatoes and coon untill they start to soften and juices are released. 
  4. Add the blanched ribs and enough water to cover the ingredients. Bring it to a boil. Reduce the heat and simmer for 30 minutes. 

  5. Add the corn segments to the pot and simmer it for another 10 minutes or untill the corn is tender. 

  6. Season it with salt & pepper. 
  7. Garnish the soup dish with spring onions.
  8. Serve it hot with rice.
