How To Cook Garlic Butter Seafood Pasta with Salmon, Scallops and Shrimps

 

Ingredients


  • 2 salmon fillets
  • 8 sea scallops
  • 8 large shrimps (peeled, deveined, tails on)
    (I used cooked shrimp meat)
  • salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon butter
For the Pasta:

  • 8 oz spaghetti or Pasta
  • 1 tablespoon butter
  • 1 garlic cloves
  • 1/4 cup white wine
  • 1/2 heavy cream
    (I used Greek yogurt + fresh milk ratio 1:1 as a substitute)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon red chilli flakes
  • Fresh parsley for garnish
  • lemon wedges for serving
Instructions
  1. Boil the spaghetti in salted water untill al dente. 

  2. Reserve 1/2 cup pasta water. Drain and set it aside. 

  3. Season the salmon, scallops and shrimps with salt and pepper. 

     

  4. Heat olive oil in a large skillet over medium-high heat.
  5. Sear the salmon for 3-4 minutes per side. Remove and set it aside. 

  6. Add butter to the skillet and sear the scallops for 2-3 minutes per side untill golden brown. Remove and set it aside.

  7. Cook the shrimps in the same skillet for 2-3 minutes untill pink and opaque. Set it aside. 

  8. Reduce the heat to medium and and add the minced garlic to the skillet. Saute untill fragrant. 

  9. Deglaze the pan with white wine, letting it reduce by half. Stir in butter and heavy cream. 

  10. Add chilli flakes and parmesan cheese, stir it untill it melts and smooth. 

  11. Adjust the seasoning with salt and pepper.
  12. Toss the cooked spaghetti in the garlic butter sauce. Add the reserved pasta water as needed to achieve a creamy consistency. 

  13. Plate the spaghetti. Place the salmon fillet on top. Arrange the seared scallops and shrimps around the salmon. 

  14. Garnish it with chopped parsley and lemon wedges.
  15. Serve it hot.
