How to Cook Pan-fried Halibut in Curry Leaf Butter


Ingredients

  • 2 Halibut fillets
  • 1 tablespoon flour, seasoned with salt & pepper 

  • 2 tablespoons butter
  • 1 tablespoon cooking oil
  • A handful of curry leaves
  • Juice from a fresh lemon or lime
Instructions
  1. Pat fish dry, sprinkle with seasoned flour and dust off excess. 

  2. Melt one tablespoon of butter in a large non-stick pan over medium heat. 


  3. Add the fish and cook one side for around 5 minutes untill lightly browned. 

  4. Cook for a further 3 minutes on the other side. Remove fish and keep it warm. 

  5. Add the oil and when it becomes hot, add the curry leaves. The leaves will hiss and spit so stand back. Cook untill leaves crisp up but remain green.

  6. Add the remaining butter and let it melt. 

  7. Remove the curry leaves from the pan and stir in the lemon juice. 

  8. Serve the halibut drizzled with the sauce. Garnish the plate with fresh parsley leaves and basil leaves to be accompanied by a bowl of steamed rice and some greens.
